1. Melt the sugar in a skillet and caramelize it.
2. When the sugar becomes the colour of buckwheat honey, add the butter and the salt.
3. When the butter melts, add the bananas, sliced lengthwise, to the skillet. First fry one side for 1–2 minutes, then flip and heat for another 30 seconds or so.
4. Add the vodka and cook for another 1–2 minutes.
5. Whip the cream with the lime zest. 6. Serve the bananas with the whipped cream.
