GRATED POTATO PANCAKES WITH HERRING PÂTÉ

Potatoes

Grated onion

Granny Smith apples (peeled, cored and cut into cubes)

Lemon
Peel of half
Water

Butter

Sugar

Salted herring fillet
300 g
Cream cheese (Philadelphia)
200 g
Chives
10 g
Very finely diced shallots
25 g
Finely chopped dill
5 g
Grated peel of half a lemon
1 pcs
Juice of half a lemon
1 pcs
DIRECTIONS

Pancakes:

1.Grate the potatoes coarsely. Blanch them in hot water and then squeeze out as much water as possible.

2.Mix the potatoes with the grated onion and egg. Then add the flour, salt and pepper and mix it all together.

3.Heat butter or oil in a skillet over medium-high heat. Add the potato mixture to the skillet, forming patties that are 4–5 cm wide and 1 cm thick.

Apple sauce:

Put the apples in a saucepan together with the water and the grated lemon peel. Cook until the apples are completely soft and lose their shape. Turn off the heat and then mix in the sugar and butter.

Herring pâté:

Put the herring, cream cheese and lemon juice in a blender and blend until the herring is all chopped. Mix in the diced shallots, lemon peel and chives.

Serving :

Put a dollop of apple sauce on a pancake and then use a pastry gun or a spoon to top it with the pâté. Serve with ice-cold Stumbras Organic vodka.
